Hewn, the storefront bakery at 810 Dempster St. in Evanston — a little like rising dough — is planning to soon double in size.
Owner Ellen King says she hopes to complete the expansion into the former Paramour Bungalow space next door by June, in time for the bakery's third anniversary.
The King says the added space will let Hewn, which now sometimes sells out of bread before closing time, expand its production capacity — to make more varieties of bread each day and bigger batches.
She also hopes to add more sandwiches to the menu, along with soup and salad offerings.
Paramour Bungalow, meanwhile, has moved to the Andersonville Galleria, at 5247 N. Clark St. in Chicago.
