Evanston aldermen, who gave final approval this week to plans for a micro-distillery, may soon be weighing the merits of adding a micro-brewery to the city’s drinking and dining options.

Evanston resident Ted Perez told members of the Liquor Control Review Board this morning that he’s been a home brewer for a half dozen years and, after taking classes at the Siebel Institute of Technology and World Brewing Academy in Chicago, has decided he wants to turn his hobby into a career.

He says he’s identified several potential locations in Evanston for a micro-brewery, and said that under state law it would be limited to producing no more than 50,000 gallons of beer a year.

Perez said he plans to have eight types of beer available all year as well as four seasonal brews.

He said the brewpub would also serve American bistro style food with French and Asian influences, and likely would offer growlers, half gallon glass jugs of beer as a carry-out option. 

Several micro-breweries or brewpubs operate in Chicago, but Perez says the nearest competition to the north would be in Lake Forest or Highland Park.

Mayor Elizabeth Tisdahl and other members of the review board seemed receptive to the brewpub idea, but Tisdahl urged Perez to discuss the proposal with the alderman of whatever ward he decides to locate the business in.

The Evanston already has a so-far-unused liquor license classification for brewpubs, but City Attorney Grant Farrar said it would need to be amended to authorize the operation Perez is considering.
